Ingredients

- ✓1/2 lb shrimp, peeled and deveined
- ✓1 tbsp olive oil
- ✓1 tsp smoked paprika
- ✓1/2 tsp red pepper flakes
- ✓1 cup shredded Oaxaca or mozzarella cheese
- ✓1 avocado, thinly sliced
- ✓Salt and pepper to taste

Pat the shrimp dry and season with smoked paprika, red pepper flakes, salt, and pepper.

Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink and cooked through. Remove from skillet.

Reduce heat to medium. Place a tortilla in the skillet.

Sprinkle cheese over the tortilla, then arrange the cooked shrimp and avocado slices on one half.
